Yields: 50-55

  1. 2 lbs dry chickpeas
  2. 2 medium onions
  3. 1 big bunch of parsley
  4. 1 big bunch of cilantro
  5. 5-6 garlic cloves
  6. Spices: 1 tsp salt, 1 tsp cumin, 0.5 tsp black pepper, 0.5 tsp red pepper or paprika. I added a pinch of cayenne pepper as well

2 tbsp all-purpose flour

Soak the chickpeas overnight (I use a tsp of baking sode inside the water that I will be soaking in the chickpeas, some people don’t). In a food processor or grinder put the chickpeas, greens, onions, and garlic. After everything is grounded, mix in the spices and flour. After mixing it all, let it star in the refrigerator for an hour at least. Sometimes I put overnight. Then shape the falafels and start frying. You can freeze the rest and use it for next time.
