Watermelon feta salad by My Halal Kitchen

Ingredients
- 1 teaspoon sea salt
- 1/2 teaspoon freshly ground black pepper
- 1/4 cup red onion, thinly sliced (one small onion)
- 6 cups freshly cut watermelon (one small watermelon)
- 1/4 cup feta cheese, crumbled
- fresh cut herbs such as mint (2 sprigs), thyme (2 sprigs), basil (2 leaves), lemon mint (2 sprigs) and/or oregano (2 sprigs)
- 4 lime wedges (or lemon)
Instructions
- To a large bowl, pour in the olive oil. Add the salt, pepper and then the red onions. Mix well.
- Pour in the watermelon then add the feta. Gently stir.
- Move the mixture onto a platter. Cut the fresh herbs directly on top of the salad.
- Squeeze fresh limes on top.
- Serve immediately or keep chilled until serving. Keeps overnight, covered, in the refrigerator.

- Prep time is for cutting; cook time is for mixing together.
Homemade falafel by @habiba_momming-baking
Yields: 50-55
Ingredients:
- 2 lbs dry chickpeas
- 2 medium onions
- 1 big bunch of parsley
- 1 big bunch of cilantro
- 5-6 garlic cloves
- Spices: 1 tsp salt, 1 tsp cumin, 0.5 tsp black pepper, 0.5 tsp red pepper or paprika. I added a pinch of cayenne pepper as well
2 tbsp all-purpose flour
Instructions:
Soak the chickpeas overnight (I use a tsp of baking sode inside the water that I will be soaking in the chickpeas, some people don’t). In a food processor or grinder put the chickpeas, greens, onions, and garlic. After everything is grounded, mix in the spices and flour. After mixing it all, let it star in the refrigerator for an hour at least. Sometimes I put overnight. Then shape the falafels and start frying. You can freeze the rest and use it for next time.

Ingredients:
- Lemon juice 1/2 cup
- Club soda: 1 can
- Sugar: 1/2 cup
- Water 2-3 cups
- Pink salt: 1/2 tsp
- Ice
- Few mint leaves
Instructions:
Dissolve sugar and salt in water, add lemon juice, mix well. Add ice and pour soda over. Add mint leaves if you like.
